What goes into my Corn Muffins?

- Check your muffins with a knife to make sure they’re cooked through, if the knife comes out clean, your muffins are ready!
- Clean as you go, if you make it a habit, you won’t feel the burden of cleaning after yourself. Baking can get messy sometimes.

Corn Muffins
Ingredients
- 1 cup cornmeal
- 1 cup flour
- 2 tablespoons honey
- 2 teaspoons baking powder
- 1 teaspoon salt
- 2 eggs
- 1 cup of milk
- 1/4 cup oil
Instructions
Preheat oven to 440F. Once the muffins are ready to bake lower to 400F.
- Combine your dry ingredients in a large bowl with a whisk, sifting your flour into the bowl.
- In another bowl, mix eggs lightly and add your milk and oil.
- Pour your wet mixture into the dry ingredients bowl.
- Mix just to combine, careful not to over mix.
- Fill the muffin liners until about 2/3 full.
- Bake for 12-15 minutes on 400F.
- Cool on a wire rack and enjoy!
