Ingredients

  • 1 cup cornmeal
  • 1 cup flour
  • 2 tablespoons honey
  • 2 teaspoons baking powder
  • 1 teaspoon salt
  • 2 eggs
  • 1 cup of milk
  • 1/4 cup oil

Instructions

Preheat oven to 440F.  Once the muffins are ready to bake lower to 400F.

  1. Combine your dry ingredients in a large bowl with a whisk, sifting your flour into the bowl.
  2. In another bowl, mix eggs lightly and add your milk and oil.
  3. Pour your wet mixture into the dry ingredients bowl.
  4. Mix just to combine, careful not to over mix.
  5. Fill the muffin liners until about 2/3 full.
  6. Bake for 12-15 minutes on 400F.
  7. Cool on a wire rack and enjoy!
