Zucchini Cake

2 cups shredded zucchini

2 eggs

1/2 cup oil

3/4 cup honey

1 teaspoon vanilla

1–1/2 cup flour

1 teaspoon baking soda

1 teaspoon salt

3/4 teaspoon baking powder

3/4 teaspoon cinnamon

1/2 teaspoon nutmeg

1/2 cup raisins

1/2 cup coconut

1/2 cup walnuts (coarsely chopped)

Cream-cheese frosting

8 oz Philadelphia cream cheese

1 stick (4oz) butter

2 cups of powder sugar

1 teaspoon vanilla extract

Preheat oven to 350F.
Combine eggs, oil, honey, and vanilla.
In another bowl, combine flour, soda, salt, baking powder, cinnamon, and nutmeg. Using a wire whisk mix well and then add to the liquid ingredients.
Stir until smooth, then add zucchini, raisins, coconut, and walnuts. Mix using a rubber spatula and bake in greased (13×9) pan for 30-35 minutes.
Cool completely
Spread with cream cheese frosting.
For the frosting mix butter and cream cheese until smooth, add vanilla and then gradually add powder sugar and mix until blended.
