Mediterranean Panini Sandwich

Ingredients

2 tbsp of red pepper & eggplant spread

Roasted red pepper from a jar (enough to make one layer)

2 tbsp of feta cheese

Handful of spinach leaves

3 slices of mozzarella cheese

Ciabatta bread

Instructions

Preheat the panini grill according to the manufacturers directions.  If you don’t  have a panini maker you can make this sandwich in a cast iron skillet and use a pan lid to press the sandwich. Slice ciabatta bread horizontally and then place the bottom slice on the panini grill.  Spread vegetable spread, place red roasted peppers, sprinkle with feta, put spinach over feta and then put mozzarella slices on top.  Cover with the other half of ciabatta bread. Lightly brash the outside of the bread with olive oil. Press the sandwich and cook for 5-6 minutes or until the bread is crisp and  mozzarella melted.
