Cornmeal Bread Buns

Ingredients
- 2 cups of milk
- 3 tablespoons sugar
- 1 tablespoon salt
- 1/2 cup butter
- 2 eggs (slightly beaten)
- 1.5 cups cornmeal
- 4 cups bread flour (sifted)
- 1.5 tablespoon instant dry yeast
- 2 tablespoons melted and 1-2 tablespoons cornmeal for topping
Instructions
- Heat milk, add butter, and stir to melt.
- Pour into a mixer bowl and leave to cool until lukewarm (120F)
- Add sugar and salt
- Mix in eggs.
- In a separate bowl, sift in flour then whisk in cornmeal and instant yeast.
- Gradually add to the milk mixture while mixing on slow.
- Turn dough out onto a lightly floured surface. Knead to make a smooth dough, then shape into a ball and place into a greased bowl.
- Cover and let it rise until double in size.
- Punch down and turn out onto the floured surface.
- Shape into small balls and place onto a baking sheet lined with parchment paper.
- Brush each ball with melted butter and sprinkle with cornmeal flour.
- Let rise for about 1/2 hour.
- Bake in 375F oven for 18-20 minutes or until golden brown.
