Cornmeal Bread Buns

Instructions

  1. Heat milk, add butter, and stir to melt.  
  2. Pour into a mixer bowl and leave to cool until lukewarm (120F)
  3. Add sugar and salt
  4. Mix in eggs.
  5. In a separate bowl, sift in flour then whisk in cornmeal and instant yeast.
  6. Gradually add to the milk mixture while mixing on slow.
  7. Turn dough out onto a lightly floured surface. Knead to make a smooth dough, then shape into a ball and place into a greased bowl.
  8. Cover and let it rise until double in size.
  9. Punch down and turn out onto the floured surface.
  10. Shape into small balls and place onto a baking sheet lined with parchment paper. 
  11. Brush each ball with melted butter and sprinkle with cornmeal flour.
  12. Let rise for about 1/2 hour.
  13. Bake in 375F oven for 18-20 minutes or until golden brown.
