Cornbread with Cheddar Cheese

Ingredients

  • 1 cup (130g) all purpose flour 
  • 2 cups (300g) cornmeal
  • 3 tbsp sugar
  • 1 tsp salt
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 2 eggs
  • 1 cup (250ml) buttermilk
  • 1 can (14.75oz can) cream-style corn
  • 1 cup chopped onion
  • 1 cup grated cheddar cheese
  • 1 cup diced red peppers

Instructions

Preheat oven to 350F.

  1. Whisk together all of your dry ingredients.
  2. Separately mix  buttermilk, eggs, and creamed corn (the wet ingredients).
  3. Pour your wet ingredients into the dry and stir all together until well combined.
  4. Mix in cheddar cheese, onions and red peppers and fold into your batter.
  5. Pour your batter into a baking pan.
  6. Bake for 1 hour.
