Banana cupcakes

Ingredients

  • 2 cups all purpose flour 
  • 1 teaspoon baking soda
  • pinch of salt
  • 1/2 teaspoon cinnamon
  • 2 eggs
  • 1 cup of sugar
  • 1/2 cup butter
  • 1/2 cup buttermilk
  • 11/2 cup mashed bananas 
  • Frosting:
  • 1/2 cup butter (softened)
  • 4 Oz cream cheese
  • 1/4 teaspoon cinnamon
  • 1 tablespoon honey
  • 1/2 tsp vanilla extract
  • 1 tablespoon milk
  • 4 cups of powder sugar

Instructions

Preheat oven to 350F.

  1. Combine and whisk flour, baking soda, salt and cinnamon.
  2. In another bowl beat softened butter with sugar, add eggs and vanilla extract.
  3. Add in buttermilk and mashed bananas.
  4. Gradually add in dry ingredients and mix to combine.
  5. Fill the cupcake liners.
  6. Bake for 22-25 minutes.
  7. Cool completely.
  8. For the frosting cream together the softened butter and cream cheese.  Mix in vanilla extract, honey, and cinnamon.  Slowly add powdered sugar and milk.  Beat until all is well blended and smooth.
  9. Frost cooled cupcakes with frosting and garnish as desired.
