It is easy to make soft and delicious homemade bread buns from scratch! But tonight, we’re substituting the white flour basket of dinner rolls on the table for a cornmeal variation. Cornmeal is a coarse flour ground from corn. This adds additional flavor to our dough, as well as more texture. Dinner rolls should be light as an accompaniment to your meal but there is no reason to not kick them up just a bit. These can also be enjoyed by themselves- add a bit of butter or honey to compliment the cornmeal and you’ve got an afternoon treat.
Yeast Doughs
I’ve heard people are intimidated with working with yeast quite a bit. These dinner rolls are the perfect starter recipe if you’re one of them! There are 4 types of yeast and here we will use instant dry yeast, which does not require the proofing process that other yeasts do. It can be added right into our dry ingredients and even activates faster. Also, this is a knead dough, requiring a bit of extra arm work, but it will be worth it with a smoother dough to shape. Then, you will need to let it rise. No work there, just do your best guesstimate of a doubled size, and you’re ready to go!

Ingredients
- 2 cups of milk
- 3 tablespoons sugar
- 1 tablespoon salt
- 1/2 cup butter
- 2 eggs (slightly beaten)
- 1.5 cups cornmeal
- 4 cups bread flour (sifted)
- 1.5 tablespoon instant dry yeast
- 2 tablespoons melted and 1-2 tablespoons cornmeal for topping
Instructions
- Heat milk, add butter, and stir to melt.
- Pour into a mixer bowl and leave to cool until lukewarm (120F)
- Add sugar and salt
- Mix in eggs.
- In a separate bowl, sift in flour then whisk in cornmeal and instant yeast.
- Gradually add to the milk mixture while mixing on slow.
- Turn dough out onto a lightly floured surface. Knead to make a smooth dough, then shape into a ball and place into a greased bowl.
- Cover and let it rise until double in size.
- Punch down and turn out onto the floured surface.
- Shape into small balls and place onto a baking sheet lined with parchment paper.
- Brush each ball with melted butter and sprinkle with cornmeal flour.
- Let rise for about 1/2 hour.
- Bake in 375F oven for 18-20 minutes or until golden brown.
