The Crust:

  • 1/2 cup unsalted butter, softened

  • 3/4 cup sugar

  • 1 egg

  • 1 tsp vanilla extract

  • 1 1/2 cup bread flour

  • 1/2 tsp baking soda

  • 1/4 tsp salt

The Frosting:

  • 8 oz. (226g) Philadelphia cream cheese, softened

  • 1/4 cup sugar (or 1/2 cup powdered sugar for smoother texture)

  • 1 tsp vanilla extract

  • 1 tsp lemon zest

The Toppings:

    • Selection of strawberries, blueberries, blackberries, raspberries, grapes, cherries, kiwis, and mangoes.

    • Optional: Sugar drizzle

Instructions

  • Preheat & Prep: Preheat oven to 350°F (175°C). Grease a 12-inch pizza pan or line a baking sheet with parchment paper.

  • Make Dough: In a large bowl, cream butter and sugar until fluffy. Add egg and vanilla; beat until combined. Mix in bread flour, baking soda, and salt until a soft dough forms.

  • Bake: Press dough evenly onto the prepared pan. Bake for 10–12 minutes or until edges are lightly golden. The center should still look soft. Remove and cool completely.

  • Make Frosting: Beat cream cheese, sugar, vanilla, and lemon zest until smooth.

  • Decorate: Spread frosting over the cooled crust. Arrange fruit on top. Slice and serve immediately or chill for up to 2 hours.

  • Drizzle: In a small bowl, whisk together 1/2 cup of powdered sugar and 1 tablespoon of milk (or water) until smooth and pourable. Drizzle over the assembled fruit pizza right before serving for a glossy finish.
