Spiral Cheese Pie (Homemade Phyllo Dough)- Sirnica

Sirnica as it’s traditionally called, is one of the most traditional Balkan cuisines you can find. Sometimes made with potato, meat (burek), or even cabbage, the sight of it makes any Bosnian excited for the meal to come.

In recent years, the popularity of Burek has spread across countries and regions, showcasing how delicious a homemade dough and filling can be. Today, I’m going to show you how easy it actually is to make.

We’re mostly using pantry staples today, starting with flour, salt, and water for the dough. Then, combine eggs, cottage cheese, and sour cream for the filling. The phyllo dough is filled with the cheese mixture and then baked until golden and crispy.

Ingredients

Scale

Dough:

  • 2 cups (500 ml) warm water
  • 1 tsp salt
  • 1 tbsp oil
  • ~6 cups (750-800g) bread flour

Butter spread:

  • 6 tablespoons (80g) of melted butter
  • 80 ml of oil

Filling:

  • 64 oz cottage cheese
  • 3 eggs
  • 2 teaspoons salt
  • 1 cup sour cream
  • 4 oz cream cheese (optional) 

Instructions

  1. Combine 2 cups (500ml) of warm water with 1 teaspoon salt and 1 tablespoon oil.
  2. Gradually add the bread flour.
  3. Mix until the dough forms. *You may do this by hand, but I always use a mixer.
  4. Divide the dough into 6 sections and form balls of dough out of each.
  5. Create a butter spread by combining the melted butter and oil.
  6. Use this to grease the tray and dough well.
  7. Cover the dough on the tray and leave it to rest.
  8. Make your filling while the dough is resting by combining cottage cheese, sour cream, and cream cheese (optional). Add your eggs and 2 teaspoons of salt.
  9. Once your dough is ready, stretch each dough ball out into a large circle. The dough should be stretched thin and be see-through. If the dough is not stretching enough, you can just leave it to rest more. *See video for how to stretch the dough.
  10. Place 1/6 of your filling at the edge of the dough and roll up so the filling is in the center of the dough. Then take this and create a spiral with the dough. Place on the greased tray for baking.
  11. Repeat with the remaining dough and filling.
  12. Bake at 440F (220C) for 40-45 min.
  13. Once ready, brush with warm water. Enjoy warm!
