Peaches ‘n Sour Cream Summer Cake

Ingredients

Scale
  • 2 large cans of sliced peaches (29oz – 822g each)
  • 3–1/4 cup (400g) all-purpose flour
  • 1 1/4 cup (250g) sugar (divided) + 3 tablespoons
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 3/4 cup + 2 tablespoons (200g) cold butter
  • 1 1/4 teaspoon cinnamon
  • 2 eggs and 2 egg yolks
  • 2 cups (480g) sour cream

Instructions

  1. Preheat oven to 400F (200C).
  2. Drain the sliced peaches from the can.
  3. In a bowl, mix the all-purpose flour with 1/4 cup (50g) sugar, baking powder, baking soda, and the salt
  4. Add your cold butter into the bowl and crumble with your fingers to mix the butter into the dry ingredients.
  5. Spread this dough on a lightly greased 13″x9″ (32x22cm) baking pan.
  6. Line the peaches over the dough.
  7. Mix 1 cup (200g) sugar with 1 teaspoon cinnamon and generously sprinkle this over the peaches.
  8. Bake for 15 minutes. While baking, prepare your sour cream mixture.
  9. Mix the eggs with the sour cream.
  10. Once the cake is baked, spread this sour cream mixture over the peaches.
  11. Mix 3 tablespoons of sugar with 1/4 teaspoon cinnamon
  12. Sprinkle over the sour cream layer.
  13. Bake for an additional 35 minutes.
  14. Once baked, cut into squares and sprinkle with powdered sugar before enjoying!
