Peaches ‘n Sour Cream Summer Cake
Ingredients
- 2 large cans of sliced peaches (29oz – 822g each)
- 3–1/4 cup (400g) all-purpose flour
- 1 1/4 cup (250g) sugar (divided) + 3 tablespoons
- 1/2 teaspoon baking powder
- 1/4 teaspoon baking soda
- 1/4 teaspoon salt
- 3/4 cup + 2 tablespoons (200g) cold butter
- 1 1/4 teaspoon cinnamon
- 2 eggs and 2 egg yolks
- 2 cups (480g) sour cream
Instructions
- Preheat oven to 400F (200C).
- Drain the sliced peaches from the can.
- In a bowl, mix the all-purpose flour with 1/4 cup (50g) sugar, baking powder, baking soda, and the salt
- Add your cold butter into the bowl and crumble with your fingers to mix the butter into the dry ingredients.
- Spread this dough on a lightly greased 13″x9″ (32x22cm) baking pan.
- Line the peaches over the dough.
- Mix 1 cup (200g) sugar with 1 teaspoon cinnamon and generously sprinkle this over the peaches.
- Bake for 15 minutes. While baking, prepare your sour cream mixture.
- Mix the eggs with the sour cream.
- Once the cake is baked, spread this sour cream mixture over the peaches.
- Mix 3 tablespoons of sugar with 1/4 teaspoon cinnamon
- Sprinkle over the sour cream layer.
- Bake for an additional 35 minutes.
- Once baked, cut into squares and sprinkle with powdered sugar before enjoying!
