Today I wanted to do something different, an easy no-bake recipe that will give excellent results, with little effort; because we deserve a break now and then.
No-bake apricot balls are becoming a trend in social media, and I’ve been doing them for years! There are many tasty recipes out there, but I love my combination of walnuts, coconut, and apricots, it’s a tropical, flavorful bite-sized treat!
These tasty apricot balls are easy and fast to make, so make sure you get your kids involved and get them started on the fine art of cooking.
What goes into my No Bake Apricot Balls?
Definitely use high-quality, dried apricots. There are many brands out there, and if you’re in luck, you can buy them by the pound in local markets. The intensely colored apricots pack a whole lot of energy, and they’re very nutritious.
Did you know dried apricots have lots of potassium? They have many vitamins too and help with digestion.
Freshly grated coconut and I don’t mean you should grate it yourself (unless you can!). Source freshly grated coconut checking on the expiration date on the label. Coconut can go dry and stale fast.
Walnuts give crunchiness and flavor, but hey, you can use pecans, almonds, pistachios or hazelnuts if you want. You can’t go wrong with any of these as long as you pick at least one.
Condensed cream is my secret recipe; it holds everything together, like tasty, sweet glue that will make your apricot balls silky and soft.
What you’ll need
You might want to mix the dry ingredients first and incorporate them into a food processor. You don’t need a fine powder either, make your mixture as grainy as you want.
The hard part will be waiting an hour while your perfectly shaped apricot balls harden and settle, especially for the kids.
Pro tips
- Add the sweetened, condensed milk slowly, make sure everything is well mixed. Too runny, and your balls will crumble apart.
- Roll your apricot balls in powdered sugar or grated coconut for a classic feel but go crazy with other ingredients. Everything goes, from powdered cocoa to crushed cereal.
- In the fridge, these babies have a long shelf life. So, make a batch and pop them out when friends come over.
No Bake Apricot Balls
An easy no-bake recipe that will give excellent results.
Ingredients
1 cup dried apricots (finely chopped)
2 cups shredded coconut
1/2 cup ground walnuts
100ml sweeten condensed milk
Instructions
- Mix dry ingredients, add condensed milk.
- Cover and chill for one hour.
- Make little balls, roll into powder sugar or coconut.
