Cake:

  • 1 box of Lemon Supreme Cake Mix Duncan Hines
  • 4 eggs
  • 1/3 cup oil
  • 1 cup milk

Frosting:

  • 11/4 cup milk
  • 1 cup of sugar
  • 1 stick of butter (1/2 cup)
  • 2 cups of chocolate chips
  • 1 lb of shredded dry coconut for coating

Instructions

Preheat oven to 360F.

  1. Blend your cake ingredients: cake mix, milk, oil and eggs in a large bowl at low speed until just moistened.
  2. Beat at medium speed for 2 minutes.
  3. Pour batter in 13×9 pan.
  4. Bake 22-25 min and cool completely.

Chocolate icing:

  1. In a medium saucepan bring milk and sugar to a boil.
  2. Remove from heat, add chocolate chips and butter, stirring until melted.
  3. Cool.

Combining:

  1. Cut the sponge cake into squares.
  2. Place a wire rack over a baking pan or over parchment paper.
  3. Pour the shredded coconut into a shallow bowl.
  4. Using a fork, dip each square into the icing, coating all sides, then roll in coconut.
  5. Leave it on the rack to dry.
