Banana Muffins

Banana muffins are one of the most versatile muffins you can make. Today I am sharing with you my simple recipe, but it is yours for the personalizing! So many different flavors and ingredients go well with bananas, especially when baked, and this moist and flavorful recipe serves as the perfect base.

Bananas are an excellent ingredient in cooking and baking alike, serving as so much more than just a nutritious snack. I will place some more ways to incorporate bananas into your baking but using them as substitutes works wonders. Vegans especially can replace eggs with bananas to make recipes vegan-friendly with nearly identical results. 1 banana = 1 egg. To decrease the fat in recipes, bananas can substitute butter in equal amounts, and oil with 1 cup oil = 3/4 cup mashed banana.

Pro tips

  • Your ingredients should be at room temperature when starting. This is true for much of baking but with muffins it especially helps make your muffins fluffy when baking.
  • It is best to use overripe bananas for this recipe.
  • If you over mix your batter, your muffins will likely come out hard. If you under mix, your muffins likely won’t rise. Baking is a science after all!
  • If your muffin is under baked in the middle, your oven may be too hot. Remember no oven is the same so you may need to decrease the temperature.
  • Using muffin liners helps with removal and serving your muffins beautifully right away.
  • This recipe is for 12 standard size muffins but this time I made 8 in jumbo size.

Ingredients

Scale
  • 1/2 cup butter
  • 1 cup sugar
  • 2 eggs
  • 1 cup ripe bananas (mashed) ~ 3 medium size
  • 2 cups all purpose flour
  • 1/2 tsp baking soda
  • 1 tsp baking powder
  • 1 tsp vanilla extract

Instructions

Preheat the oven to 350F.

  1. Melt butter and leave to cool.
  2. Add eggs and sugar into cooled butter.
  3. Add your mashed bananas and vanilla extract.
  4. Sift in flour together with baking powder and baking soda.
  5. Mix to combine.  Do not overmix.
  6. Spoon batter into muffin cups.
  7. Bake for 30 minutes.

Serve in Mariposa Lotus Paper Cups or Tulip Paper Cups.
