My favorite projects always involve chocolate. Everyone seems to get over-excited as they smell my chocolate pastries and cakes in the oven. Chocolate simply makes people happy, and that’s what I’m all about — making people smile.
Sure, there are many chocolate desserts and cakes, I actually have perhaps a dozen different recipes involving this lovely ingredient. Today I want to talk about my recipe for chocolate milk cake.
Let’s face it, who doesn’t love chocolate milk? Don’t lie to me now. No matter how old you are, chocolate milk is one of the most satisfying things in this world. When you add this delicious drink to the cake, you end up with something out of this world.
My chocolate milk cake is gaining a following, and it’s because it has such a familiar flavor! Like the food critic in the Ratatouille Movie, a bite of this treat transports you to your grandma’s kitchen, to your dearest childhood days. Don’t believe me? What goes into my Chocolate Milk Cake?
This recipe has two distinct parts, the chocolate milk cake, and the soft and airy chocolate cream that goes on top.
Chocolate glaze or whipping cream top the cake but feel free to use both.
The cake is a standard, fluffy cake made out of all-purpose flour, eggs, sugar, and baking powder. The flavor comes from both cocoa powder and chocolate milk.
The secret of all milk cakes is adding the milk to your already baked cake. The resulting moisture is hard to match, as all the bread soaks up the delicious chocolate milk flavor.
The topping chocolate cream is a buttery one; it is made with plenty of butter, high-quality chocolate chips, sugar, and eggs.
What you’ll need
To start, you’ll need two mixing bowls. This is an excellent recipe to give good use to your stand mixer too. A buttered baking pan and the regular tools of the trade are enough to make this pretty and flavorful milk cake.
Pro tips
- Go one step at a time; you’ll need to blend both the egg mixture and the dry ingredients correctly. Incorporate them gently.
- Let the cake cool a bit before adding your chocolate milk to get the purest chocolate flavors.
- Serve your cake slightly cold; it will accentuate the cake’s moisture. Who doesn’t like cold chocolate milk?
Chocolate Milk Cake
Ingredients
Cake:
- 6 eggs
- 3/4 cup sugar
- 1.5 cup all-purpose flour
- 4 tablespoons cocoa
- 1 tablespoon baking powder
- 8 tablespoons warm water
- 2.5 cups chocolate milk
Chocolate cream:
- 6 eggs (separated)
- 1 cup sugar
- 1 cup semi-sweet chocolate chips
- 1 cup of butter (softened)
- 1 cup of heavy whipping cream for additional topping on cake (optional)
Instructions
Preheat oven to 360F.
- Whisk your eggs and then add sugar and continue mixing until fluffy.
- Sift flour, cocoa and baking powder together.
- Add water to the egg mixture and then turn off mixer.
- Add your flour mixture and mix with a whisk until all are combined.
- Spread on to a 13×9 baking pan and bake for 20 minutes.
- Cool a bit and then pour your chocolate milk over the baked cake. Leave to cool completely.
Chocolate cream:
- Using a double broiler, cook egg yolks with sugar.
- Add chocolate chips and mix until melted. Remove from stove to cool.
- In a bowl, mix your softened butter and add the chocolate mixture, spoon by spoon, mixing well after each addition.
- In another bowl mix egg whites with powder sugar.
- Fold this into the chocolate mixture. This is your chocolate cream.
- Spread the chocolate cream over your cake.
- Microwave chocolate chips with 4 tablespoons of oil and mix until chips are melted.
- Pour over the cake. Leave to cool.
- Once cooled, cut into squares.
- For additional decoration mix 1 cup of whipping cream with 2 tablespoons of powder sugar and pipe onto each square. Sprinkle with cocoa for taste.
