Luckily, the NorthEast backyard can be quite delicious itself.
Let’s head across the NYC Hudson to New Jersey’s popular city of Hoboken, specifically for a unique twist on a brunch classic at Turning Point. Right before heading into my current quarantine in Florida, right on the waterfront, the Big Easy Eggs Benedict changed my perception of what an eggs benny can be. Feast your eyes on the below:
Cornbread > English muffin, on any dish. Fluffy, golden, and just a tad sweet- it adds so much more flavor than the traditional, plain muffin ever could. There’s so much you can do with cornbread as well, from making it vegetable-rich to a traditional Southern recipe (there is a difference compared to the Northern way!), it has to be one of the most versatile breads. This one was classic and with everything else going on in the dish, it was just perfect. (See here for one of my favorite recipes made with cheddar cheese which would work well if you try to replicate this breakfast).
Using cornbread is not a novel concept for eggs benedicts, so why am I hyping this one up? Because instead of a Mexican-styled flair, this particular benedict was a Creole twist! Onions and peppers are livened with a creole seasoning, then topped with avocado, and chicken chorizo because, why not. The eggs are poached to perfection and then drizzled with a creole spiced hollandaise. The creole hollandaise sauce is the real kicker, rich and creamy as it should be but a herb blend that takes over your taste buds in the best way possible. In case you didn’t know, creole food is an influence of German, Spanish, French, African, and many more using seasonings like paprika, red pepper, garlic, and onion. *Note this is not Cajun seasoning.
