Wonderful buns with delicious cream-cheese filling baked in the center.
3/4 cup milk
1/3 cup butter
3 cups flour
1 Tbsp instant yeast
1 Tsp salt
1/2 cup sugar
2 beaten eggs
1 Tsp grated lemon zest
Cream-cheese filling: Blend 8 oz of Philadelphia cram cheese (softened), 2 tbsp of sugar, 2 egg yolks, and 1 Tsp of vanilla extract.
Whisk together flour and instant yeast. In a small pot bring milk to boil. Add butter, salt and sugar to the mixing bowl and then pour milk over it. Stir till butter melts. Cool to lukewarm. Add beaten eggs, lemon zest and one cup of flour; mix well. Gradually add remaining flour, mixing well. Cover the bowl and refrigerate dough for four hours.
Divide dough in fourths. On a floured surface roll each portion to form rectangle. Cut in 6 squares. Place about 1.5-2 tbsp of filling in the center of each square, bring opposite corners to the center pinching to seal.
Place on greased baking sheet (or lined with parchment paper), brush with beaten egg white. Leave uncovered for 30 minutes and then bake in hot oven at 400F 12-15 minutes or till done.
*For additional sweetens you can roll the buns in powdered sugar but that’s just an option.
