Nothing beats the aroma of fresh baked bread. Oatmeal bread is delicious and makes great sandwich or toast.
1 1/4 cup boiling water
1 cup quick cooking rolled oats
1/2 cup molasses
1/3 cup butter
1 Tbsp salt
2 eggs (beaten)
5.5 – 6 cups of flour
2 Tbsp instant yeast
Combine boiling water, oats, butter, molasses and salt in a mixing bowl. Leave to cool to lukewarm. Whisk together flour and yeast. Stir in 2 cups of flour, beat well, add eggs and beat well. Add enough flour to make a soft dough. Transfer to a lightly floured surface, cover and let it rest for 10 minutes. Knead until smooth; place in a lightly greased bowl. Cover and let it rise until double in size, about 2 hours.
Coat 2 greased 8 x 4 pans with oats. Punch down the dough, divide in half, shape the loaves and place in prepared pans. Cover and let it rise again, about 1 hour. Brush with mixture of 1 egg white and 1tbsp water, sprinkle with oats.
Bake at 375F for 40 minutes.
